Thank GOODNESS they are only dreams. The CrossFit Games Regional Workouts were released and all I can say is WOW! I can’t imagine what the FINALS will be like!

Moving ON for sure. I’ll just keep dreaming. And maybe one day I’ll be able to complete that insansity. As for my WOD this morning – Draining for sure!

We worked on Snatch Push Press for Skill/Strength. I’m pretty sure some people call it a Behind the Neck Press as well. It’s a wide grip on the bar with the bar resting on the back of your shoulders. Like as if you’re going to do a Back Squat. Instead you push press overhead. We did a 3rep Max and I managed to bust out 3 reps at 85lbs. I still had that “popping” every time I came down with it on my Right Shoulder. I kind of googled it and read that I may have a shoulder impingement. GREAT another IMPINGEMENT. I already have one on my hip! Can I just get a new BODY? PLEASE! One that works a little better? Hehehe. I found a video at Catalyst Athletics that shows the movement. The link is below 🙂

So for our MetCon it was 3 Rounds of Hill lunges and 50 KB Swings. Dang that’s gonna be a lot of lunges and KB swings! My legs are still sore from Tuesday…errr and uh Monday! Coach tells us what KB to pick up… 1 POOD for me and now we gotta walk it to our “enemy” the HILL! I hate this hill! I really do because when we are running it’s the HILL that gets me, EVERYTIME! We walk the 200 yds or whatever it is to get to our starting point. Coach marks out a distance of what looks like TOO long for lunges but it is what it is. He comes back and tells us we will lunge from one cone to the other. Run, walk or crawl back and then knock out your 50 KB Swings. FOR TIME! 3, 2, 1 GO. So the first round of lunges weren’t so bad. We all kind of hit them at a good pace and felt good. Not feeling so good after the KB Swings. But I did do the first round UNBROKEN! HELL YA! Second round of lunges – PAINFUL! But survived. Second Round of KB Swings were not unbroken. I did 20, 5, 15 and 10 I think! I was behind John and ODB by like a few swings and was quickly catching up on the lunges but when I got back for the last round of KB Swings I lost form and the back started aching and it was sad. I managed to knock out 15, 5, 5, 5, 5, 15. Finished for a Time of 11:14. The most NOT FUN part was having to carry our darn kettle bell back to the box 😦

I did lots of rolling out on the foam roller. Back felt much better. Then I worked on some pullups. I don’t have much time to work on them but I hang around for 10-15 minutes. I can finally do pullups with just the green band! Only 3 but better than NONE! Before I had a combo of the blue and green band. WOOOOO! So excited. So I did 3 sets of 3 pullups on green band and did 10 reps with the combo bands. I’m pretty excited about the progress. Let’s hope I just get this goal knocked out sooner than later!

It’s Thursday folks. I still gotta make those choco cherry cookies and it looks like the brownies will be a staple in our home. Great Success! ROCKIN IT OUT 1 YEAR LATER!

I’ve only been blogging for a couple of months but I’ve been on my fitness and good health journey for a year now! It was this week ONE YEAR ago that AJ Tucker from iChooseFit bootcamps called me up and told me I had no more excuses! There was a location practically in my backyard and it was my time to get moving.

That phone call couldn’t have come at a better time. I had lost my mother a few weeks before that phone call. I was a hot mess of overeating and drinking a few too many alcoholic beverages. I was a round butterball standing at 5’2″ tall and about 160lbs. I know I wasn’t 250lbs but I was on my way there. I’ve had my roller coaster with eating right and getting fit since I had my first child almost 13 years ago. But I was in a bad spot getting worse at this point in my life. I was supposed to start Feb 7th but there was a ton of ice that week and I had other “excuses” pop up. It was actually Feb 14th that I started working out but it was this week a year ago I prepared myself to kick my own ass!

I’ll be honest the first two weeks of bootcamp were tough but I was still coming home and eating too much and having the occasional cocktail. After that first two weeks I had not lost a pound (even gained a pound if I remember correctly) and I was furious with myself. Why put in all the hard work at 5:30 am and NO RESULTS. I knew I had to change it ALL up at once. Jump in the DEEP END of the pool and get to work. And so I did. iChooseFit wasn’t only about getting your butt beat down it was about nutrition. There was a FoodCamp program included and I got all the info I could and I got to work. I got serious. I went shopping for good stuff, jumped in with Advocare and got my head on right and my tail into gear. In the first week of the program “shakedown” I lost 7lbs! HOLY SHIT! Are you kidding me? Who is this girl? I didn’t know her but I was already liking her. I’ll never forget I could barely do a pushup without falling to my knees and after that week I had lost 7lbs I was doing KNEE PUSH UPs. AJ was going on with some cadence about how you grew so it’s up to you to move it, in regards to weight. Then all of a sudden I hear “Stephanie, Get OFF your knees!” It was all nice and sweet in the cadence but it was serious. I surely thought that couldn’t be me he’s referring to (there’s at least 5 Stephanie’s enrolled) and sure enough he was talking about THIS STEPHANIE… he says you’re 7 lbs lighter get off your knees and do regular pushups and SO I DID and from there on out I did regular pushups to the point where I HAD to drop to my knees.

I never stopped pushing myself from that point! In 3 months I lost 20lbs! I was stoked! And maybe I was a little too stoked! I started eating a little more, indulging a little more and even though I was working out like a crazy person I started to feel like poo again. I would gain some lose some, gain some more, lose some more but just hovering. I had got myself into a funk of sorts. I needed another kick in the butt and I just wasn’t able to do it myself.

This was about the time I started CrossFit in August. CrossFit Boom to be more exact. I had met my coach, Grant Coomes, at a CrossFit challenge in Dallas. It was soon after that he opened his box and Ernie signed up. It was only a couple of weeks after that and I was “trying” it out. I was excited for something new and the competitive aspects of it all but I was hesitant because it involved a lot of NEW movements and a lot of learning and I wasn’t sure how competent I would be! I can’t even begin to tell how silly I was in thinking such things. As with anything you train, you learn and you practice. Baby steps! Before I knew it I was doing olympic lifting, slinging around kettlebells and doing “dirty girl” WODs. I even entered my first “competition” (for beginners that is) only 2 months after my start date! I didn’t KILL it but I came in 26th out of 50 women.

I was feeling better than ever, stronger than ever and started dabbling in the PALEO world. I can’t even begin to tell you how much I’ve changed in the past year. And thus my blogging commenced. I should have started a year ago but I knew myself and I was a mess. I would try something for a few weeks then quit. I was a binge worker outer. But a year later I feel confident I am no longer that person. I’m an ATHLETE, in progress still, but an ATHLETE none the less!

I can’t say that I didn’t know this was in me because once upon a time in a land far far away I was a tiny little athletic thing. But I hadn’t been there in such a long time. I’m a different person now for certain with goals and long term thoughts of good health. Back then it was just who I was, a kid, ignorant to what laid ahead of me in life. I can’t say that I’m that much more knowledgeable now, haha,  but I have 3 kids I want to LIVE for and that I want to lay the foundation for them. I want to be around for their kids and be the baddest grandma in town!

So now I’m a good 30lbs lighter. I still fluctuate and probably always will. Right now it’s between 30-35lbs lighter. But I’ve truly learned to not let the scale lead the way. Sure mentally I’d like to lose a few more lbs. I’m only 5’2. And sure I’d like everything to be rockin but the fact and truth is that I’ve had 3 boys and I didn’t take care of myself like I should have but I’m on the right path now. It doesn’t happen overnight. I do know I feel strong. I don’t weigh everyday, not even weekly. I know I’m putting good things in me and I’m taking time to work on my physical self. With that comes confidence that helps me work on my mental and emotional self! It’s a WIN/WIN!

I know this wasn’t a workout update or a food update…. just a personal one to let you know, YOU CAN DO IT TOO! I wasn’t already skinny, getting skinnier. I wasn’t healthy and just dialing in on better health. I was and still am a regular girl, lady, woman….whatever, hahaha, I still call myself a GIRL. Life hits me hard sometimes but I know I can take it on. I have a great family. I have great support systems in both iChooseFit and CrossFit Boom. I’ve met a lot of like minded folks who inspire me. I FEEL GREAT. It’s a good feeling. Find your path. Find buddies. Find HEALTH! Live life. Don’t sit on the sidelines watching it go by. Don’t just WATCH the reality weight loss shows or READ the blogs. DO SOMETHING. MOVE YOUR BUTT! I promise you’ll feel better. You can see on my About Page my befores and afters. I don’t take many pics cause I’m still critical of myself in picture form! I’m working on it. But I did snap a shot of me today.

More Foods, More Beatdowns and More Airrosti

I really enjoy being in the kitchen when I have the time and right now I have the TIME… not for long when baseball season gets into gear and the boys are going full speed ahead BUT for now I can play in the kitchen and it’s fun!

Meatloaf was on the brain last night and I had 2lbs of grass fed ground beef ready to be cooked. I did a quick search on the interwebs and stumbled across Paleo Diet Lifestyle and a recipe they had on their site.

Paleo Meatloaf with Mushrooms! It was a HOMERUN in the family department. Perfect served up with Mashed “Potatoes” Cauliflower and some Asparagus.

2 lb ground beef (you may substitute with ground pork);
1 ½ tbsps salt;
1 tsp ground black pepper;
1 egg;
1 medium onion, finely chopped;
2 cups white button mushrooms, finely chopped;
1 tsp chili pepper flakes;
3 tsp fresh thyme, minced;
1 tsp fresh oregano, minced;
3 cloves garlic, minced;
½ cup homemade ketchup;
(I USED an ADDTIONAL 1/3 CUP for the meat Mixture … stephanie)
1 tbsp honey, optional;
½ tbsp Worcestershire sauce, optional;
1 tbsp paleo cooking fat;

Preparation
Preheat your oven to 350 F.
In a medium sized skillet placed over a medium heat, melt the cooking fat, add the mushrooms and saute for 2 to 3 minutes, or until soft.

In a large bowl, combine the meat, salt, pepper, egg, onion, mushrooms, chili pepper, thyme, oregano and garlic. Mix well, makng sure to break-up the meat. Add the cooked mushrooms as well. It’s very important that the mushrooms are evenly distributed to ensure the loaf bonds well.

Lightly grease loaf pan with additional cooking fat and fill it with the meat mixture. Place in the oven and cook for approximately 15 minutes.

Meanwhile, in a small bowl, combine ketchup, honey and Worcestershire sauce to make the sauce for the top of the meatloaf.

After cooking for 15 minutes, gently spread the sauce on the top of the loaf.
Continue cooking for another 40 minutes.

PLEASE NOTE… I did not make my KETCHUP. I used organic ketchup from Whole Foods. While this has some sugar in it, it is better than OTHER ketchups. In the future I plan on making my own ketchup but I didn’t have the tomatoes to do so. Also I added some ketchup to the MEAT mixture – about 1/3 cup. I also left out the Worcestershire sauce because I don’t have any in my kitchen.

While that was baking, I steamed up some cauliflower and garlic gloves. Once the cauliflower was done I salted and peppered it up, threw it in the food processor with 3 TBS of pasture butter and got it mixing. It turned out really nice and creamy in texture. Perfect with the meatloaf! The kids gobbled it up as did Ernie and myself. We then watched some Biggest Loser to see if “CrossFit” was incorporated and passed out!

Rise and Shine (in the dark) as it was an early morning today. It’s my CrossFit day off and I decided to attend iChoosefit Bootcamp in Midlothian. It’s a good 25 minutes away from me but they have an indoor facility that I’ve been wanting to check out! One of my local bootcamp friends came along for the ride as well. We were equally impressed with Speed & Performance Training Facility. The upside to this place is that they have barbells and plates which allows for heavier lifting than the mobile bootcamp allows. It was a good beatdown today. We had everything from Box Jumps, Back Squats, Deadlifts, Sled Pushes, Running and so forth! AJ did not hold back in his beatdown. It’s a great large space with plenty of equipment. I wish I owned something along those lines.

I came home with no ambition in regards to cooking so breakfast was eggs and fruit. But I was excited for my AIRROSTI appointment. My hip pain has dramatically decreased and it appears that I have an impingement in my hip so I’ll always have to work hard at keeping myself properly stretched as well as keep up with the foam roller and ice. But the constant burn and ache is GONE. It would hurt while I was just sitting in my car on the drive home or burn if I was on my feet for too long. I definitely recommend giving AIRROSTI a try! Thank you Dr. Bertrand and Casey!

Ok, So I’ve kept up with this thing for a month already! I feel pretty good about that and I’ve had ALMOST 500 views, I feel pretty good about that as well. One day maybe it will be 500 views a day and not  500 a month but it’s small steps right?!? And I’ll take all the views I can get… SHARE ME with your FRIEND!!! Please 🙂

So this past weekend was a hectic whirlwind of STUFF. Got my two workouts in Saturday Morning. First stop iChooseFit at 7 am. We had a nice beatdown. Great start to get my blood going. I go home, put on dry clothes, eat something and head out with Ernie to the Saturday Funday WOD at the BOOM Box. And boy was it was it a doozy!. TEAM WODs!!! – which can be good or bad depending on how you look at it. Lucky for me I had Tristan, 15 yr old beast of kid who loves to CrossFit! Sadly for Tristan he had me! Hahahha, I’m not so bad but pullups were part of the workout and I SUCK at those. Fortunately we were a good team. The WOD was a chipper …. woohooo fun. For those of you who don’t know it’s where you take movements and do a shit ton of them till you want to puke… ok well there is more to it but that’s how I personally feel about chippers. It’s where you start with high reps and work your way down in reps. So ours was 150 Box Jumps, 125 KB Swings, 100 HR pushups, 75 pullups, and 50 Weighted Overhead Lunges. We knocked it out in a mere 19 minutes and 2 seconds. 1st place baby!!!! It was a killer of a workout. And again, not dead, still living.

After we showered and got some fuel in our bellies, it was time to load up and head out to a casting call for a reality adventure show… ESCAPE ROUTES!

We had a quick interview, got the kids some free tees! Thanks @CastingMalley and @CastingRane! And…… we got a callback! Woohoo, Go US! Except we were kind of lackluster at our callback and it felt like a bad date. I don’t think we were really “us” and we seemed kind of boring (from the outside looking in). And if you know us… YOU KNOW WE ARE SOOOOO NOT BORING! So hopefully fingers, toes and everything else crossed, we weren’t too boring and maybe our applications were entertaining enough to get us on through to whatever the NEXT round may be. We’ll see.

After running around all afternoon like crazy people we finally wrangle ourselves back home and the cake baking begins for my annual CAKE BALL FRENZY! It’s not PALEO but I just didn’t have time to figure that one out! It started a few years back as “class” gifts for each kids class and teachers and well now it’s become their tradition. In addition to cakeballs we’d get the teachers gifts and wrap them all up… As the kiddos get older they get more teachers so I began to give them ornaments…The most UNIQUE ones we could find that the kids thought appropriate. And this year I decided to MAKE them.

You just don’t “GET” all there is to them in these photos. They are filled with cuteness and that didn’t translate well with the lighting or my iphone.

I AM NOT A RUNNER

I am not a runner NOR do I aspire to be one. I don’t train to “RUN”. I don’t care to run. I don’t take casual runs around my neighborhood or local park to relax or blow off steam. Running is a big ol pain in the ass to me. You get the point, I HOPE!

So when I say I don’t like to run it doesn’t mean I don’t run when requested of me at either iChooseFit bootcamp or CrossFit Boom. I run. I just don’t like it. So Stephanie what are trying to get at? Why do you keep rambling?

Well 9 months ago I took my first ever conditioning type test and I was miserable and felt horrible and hated life. I was a chunk of a girl trying to get through one hell of a workout. Part of the test was a mile run. Yay fun! 1 whole mile and I thought I would die. UPHILL! Well part of the way uphill… it’s called Hamburger Hill and it’s a hill that I have not befriended. In order to make the “mile” we have to run up it twice… EVEN BETTER right? So I ran this MILE in 11:47 in March of this year. Not really horrible but not stellar by any means. This past July I took another conditioning test and low and behold I took off more than 2 minutes off my time. I ran the mile in 9:06! SAY WHAT? Amazeballs! Well, no test today but we timed our mile this morning and believe it or not even more time got shaved off. 8:36 MILE! Are you kidding me? I felt so good about that time you have no idea. 8:36! Yes me, the NON RUNNER who doesn’t train to run. That is the proof in the pudding (proper saying, not sure but it sounded good) that it just takes consistent physical training to get the job done. I know it’s not a 6 min mile or some magical “runner” number but that’s a number I’m damn proud of! Woohooo…. Thank you iChooseFit… Thank you CrossFit BOOM!!

So now I’ve got that out of the way I have more stuff to share! It’s a good day for blogging but maybe blogging overkill. So I’ll keep it short and just put pictures.

For dinner I had some chicken out to cook. Ernie was starving and really didn’t want to wait but I made him wait anyways. My dad took care of the kids dinner so I didn’t have to worry about them starving. Just Ernie but he lived and all was well. So I sauteed up the chicken with some coconut oil and yummo spices. While that was simmering away I made a mad dash to make FRIED RICE out of cauliflower. I kind of sort of followed this recipe from NON NOM PALEO but I didn’t have all the ingredients so I took what I did have and winged it. Post dinner I decided to make a go for it with a new cookie recipe I found at elana’s pantry … http://www.elanaspantry.com/double-chocolate-mocha-cookies/

I used all the ingredients except for the coffee because I had none. After burning the bottoms of some of the cookies I was upset. But they still tasted ok for having some char on them. The next batch were burn free and delightful! Added bonus: kid approved! So overall another WIN!

Double Chocolate Cookies = GREAT SUCCESS!

 

Double Chocolate Mocha Cookies
2 ¼ cups blanched almond flour
¼ cup cacao powder
2 tablespoons organic decaf coffee, espresso grind
½ teaspoon baking soda
½ teaspoon celtic sea salt
½ cup grapeseed oil
½ cup agave nectar
1 tablespoon vanilla extract
¾ cup dark chocolate chips

  1. In a large bowl, combine almond flour, cacao powder, ground coffee, baking soda and salt
  2. In a smaller bowl, stir together grapeseed oil, agave and vanilla
  3. Stir wet ingredients into dry and then mix in chocolate drops (or chunks)
  4. Drop dough by heaping tablespoonfuls onto a parchment paper lined baking sheet
  5. Bake at 350° for 7-8 minutes
  6. Cool and serve
Makes 24 cookies

Paleo Cake Ball FAIL and other fun stuff

Before I get to CAKE BALL FAIL… I’ll discuss my workout this morning… then I’ll move on to last nights cookin’!

It was a windchill of 21° this morning as I drove to bootcamp. Thank goodness we have an indoor option! Although we did have a run that included being in the FREEZING COLD – not fun. Come on now, we’re in TEXAS! I’m not made for the cold! As always boxing is my favorite part of the Tuesday workout. We’re always mixing it up and I feel like I’m getting quicker every week. AJ makes sure to keep me on my toes! In addition to boxing we did a 20 minute AMRAP if you will. There were 8 movments where we had to do 25-50 reps of something and then run with a 20 minute time limit. (pushups, bicep curls, alligator plank, burpees, jack knife dead lifts, star jumps, up/down plank, run) I got through 1 round and 4 movements into the second round! Woohoo. I felt good today. I suppose I got some good sleep 🙂

Now for last night…..So my Paleo Cake Balls were an epic FAIL, my kids including myself were sure we would never erase the taste from our mouths. When you get too much unsweetened chocolate in one large ball it’s pretty disgusting! Although they came out just as pretty looking as any NON PALEO cake balls I have ever made. There will be a round 2, I promise, I just have to find a “good” PALEO frosting to mix with my cake crumbles.

So now that’s off my chest and I admitted my failure, lets move on to the goodness that did pan out last night. PALEO PUMPKIN CREAM CHEESE which I took from PaleoOMG blog http://paleohmygoodness.blogspot.com/2011/10/paleo-pumpkin-cream-chicken-casserole.html

It turned out quite tasty and the family seemed to agree. I feel that I liked it best since I scarfed it down or maybe I was just that hungry.

Paleo Pumpkin Cream Chicken Casserole

Paleo Pumpkin Cream Chicken Casserole Served!

What you need:
1-1.5 lbs chicken breasts, chopped into 1 inch cubes
1 medium sized spaghetti squash cooked and shredded
1 head cauliflower, chopped
1 can pumpkin puree
1/2 can canned coconut milk
3 garlic cloves, minced
1/2 yellow onion, diced
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
salt and pepper, to taste

What you do:
Preheat your oven to 425 degrees.
Time to roast our veggggggies! Chop your cauliflower and put it in a baking dish topped with a little bit of olive oil and salt and pepper. Then cut your spaghetti squash in half, use a spoon to scoop out the seeds and extra threads, place face down on a baking pan. Add the cauliflower and spaghetti squash to the oven, side by side if possible, to roast for around 25 minutes. (Depending how big your spaghetti squash is, the cauliflower made roast a little quicker, but mine cooked at the same time) You will know your spaghetti squash is cooked when you can poke the outside skin and it gives a bit.

While the squash and cauliflower are cooking, it’s time to cook up your chicken. Pull out either a LARGE saucepan or a large pot and put under medium-high heat.

Add olive oil to it along with your minced garlic. Once the garlic begins to smell, add your chopped onions and cook until translucent.

Add your chopped chicken to the cooking onions, cover and let steam for around 5 minutes.
Once the chicken is about 2/3 cooked through, add your can of pumpkin, half can of coconut milk, and spices directly to the pan. Mix thoroughly. Taste to see if you need any more spices or salt.

Once your squash and cauliflower is done cooking, and chicken saucey mixture is heated up, de-thread spaghetti squash with a fork, running the fork the opposite way of the threads.

Add your spaghetti squash threads, roasted cauliflower, and chicken saucey mixture to a 9×11 glass baking dish and add dish to the oven under the broiler. Cook for about 5 minutes, getting a little dark on the top.

Remove from oven and let sit for around 10 minutes to help the sauce thicken up. Then EAT! It’s good stuff and rather easy to make.

AFTER I had cleaned up dishes and had my cake ball disaster I decided I would get a jump start on tonight’s prepping and got zucchini all sliced up to cook as my “spaghetti”. It’s just prepped and in the fridge for now

But post prep I had some zucchini ideas, ran it past the kiddos and they were on board so we made tiny zucchini sandwiches! This was quickly packed away into containers for their lunches. They were very excited about them and tried out a couple. There’s one for the WIN column. I hope they enjoy them today at lunch. MY 8 year old says the kids at school think what he eats at lunch is GROSS! Then he procedes to tell me “they have no idea what GOOD food is… raspberries are awesome and my sandwiches are going to be good today! They all eat chips and crackers, and sugar stuff. That’s stuff isn’t good for you” He’s a good kid that Jakob. 🙂
