Friday! Friday! Friday!

Hello Friday, Hello World….

4 weeks left then it will finally be 2012! I’m so happy for 2011 to be coming to an end. It has not been a GOOD year. It’s been alright but I’m ready to move on.

Yes the slacker in me forgot to take a picture of this mornings WOD. It’s not so much that I’m a slacker, well I am, but in regards to the picture taking it’s that I forget. I am so darn tired and my brain just stops functioning properly. The last thing I remember is to snap a pic and it’s halfway home when I finally do remember. I could ask our coach but I’ll use him as a crutch and ALWAYS ask him to send it to me, I’m sure he’d rather not be bothered with that tiny task daily :/

WOD 12/02/11

I did this in 6:51. I should have been quicker at it but I moved slow in the first round of burpee box jumps. It’s a fault I have that I need to correct. It seems I always take my first round a little slow and then I think to myself “oh crap, you gotta move!” I guess it’s part of it and I’m still learning new things.

We finished a little early so I got to work on my kipping a little. I’m definitely getting better and oh so close to getting that pull up. It’s there but a lot of it is mental on my part and the darn bar hurts my sad little hands.

Tomorrow will be a double workout. First at iChooseFit then off to the BOOM Box! Open WOD tomorrow so come out if you can even if it’s just to watch 🙂

Enough WODtalk and moving on to what I made for dinner last night (that I didn’t eat). So I was running low on supplies but had a little of this and little of that and I already had mentally prepared to make a beef soup of sorts and that is what I did. I used chicken broth, carrots, celery, onions, salsa and a little tomato sauce. I tossed in the ground beef and some extra seasonings.

While that was simmering up I decided to make some Paleo bread (cornbread like). I whipped up the ingredients and realized I was supposed to use Baking Powder not BAKING SODA! What do I do? I don’t know. I don’t want to waste 8 eggs or my coconut flour so I just threw in Baking Powder as well and crossed my fingers and prayed for the best! So I poured my batter into a muffin tin and put it in the oven knowing it couldn’t go that “bad” could it? Well they came out cute and sweet BUT the bottom halves had a slight green tint to it. So of course I freak out… like how could that happen. What’s going on? Well we came to the conclusion that it’s the baking soda’s fault. The bread although bland still was edible and the kids enjoyed it. It should make for a great lunch in a few hours!

Paleo Bread Prep

Beef Soup and Paleo Bread

Here’s the recipe for the bread in case you want to give it a whirl. From Paleo Foodies:

http://www.paleoforfoodies.com/2010/11/paleo-cornbread-muffins.html

Ingredients:
2/3 cup coconut flour
1/2 cup butter (1 stick) (If you cant eat butter, mix coconut butter and olive oil)
8 eggs
1/2 tsp salt
1/2 tsp baking powder

Preheat the oven to 400 degrees. Whisk together the coconut flour, salt, and baking powder. In another bowl, beat the eggs. Whisk in the melted butter. Add the coconut flour mixture to the egg/butter mixture and stir to combine. I used a Kitchen Aid to blend quickly until if formed a dough mixture. Divide the batter amongst 12 greased muffin tins. Bake for 25 minutes or until golden browned. Take out of oven and let cool. Use in stuffing or eat just by themselves! YUM!

Rest and Rambling

What I Felt Like This Morning!

Happy December EVERYONE!

Well I woke up this morning to work out NO PROBLEM, but my body was one big ache so I said to myself that this was a sign I needed a DAY O’ REST! Yes I’m human. I’m not a robot or super hero with super hero strength and powers. But ya never know I may try to squeeze something in later this evening. Doubtful but there’s always that option.

If you know me, I tend to ramble. I can be quick and to the point sometimes but a lot of times I have to much to say even though it’s typically useless information. I am the best at storing that kind of info. So I’ll try to keep it short. Besides the foods and the workouts I’m not sure how I will utilize this blog. I don’t want to get to out of control but hey life gets out of control sometimes and maybe I will too!

No segue here cause I really don’t know what would best fit so there you have it. And I want to stay current and not waste my time trying to be proper when my brain is failing me.

Last night the kids had eaten at my dad’s house so Ernie and I decided to hit up the Outback where I enjoyed a 6 oz sirloin with a salad (no croutons or cheese) and sweet potato fries… SEE I’m human again. And you may think oh wow..she partook in the eating of SWEET POTATO fries … big whoop! Well, they were a little over cooked… which we still ate by the way but our waitress brought us more cause she felt bad and when I say MORE I mean 4 more orders of them! Are you kidding me?!? NO she wasn’t…. and we sure as hell did eat every last one of them. And it was all yummy! And there were no dishes for me to clean. Which means I don’t have leftovers for lunch but I had a plan! I cooked the ground beef I had out for dinner this morning and take some some fruit and veggies! Woohooo, I saved my lunch 🙂

Now you know I don’t run a PERFECT ship over here. I have my faults and I have my weaknesses. I just try to stay within good boundaries.

Since it’s a DAY O’ REST I have no WODs, workouts or anything fun to share. I do plan on making some sort of ground beef soup/stew this evening. I also found a recipe for a paleo muffin using coconut flour that I may try out …. so there is something to look forward to..hahaha, that is if you are actually looking that far ahead. I barely have a plan a few hours ahead much less a whole day or more.

Have a Fantabulous Thursday!

P.S. Yes Jonas fantabulous is a word in my dictionary!
